Loose leaf tea is simple to brew, and a few small details make a big difference to the flavour. Here’s how to get the best from every cup.
What you’ll need
- Your favourite loose leaf tea
- A teapot with an infuser, a tea strainer, or a reusable tea filter
- Freshly drawn water and a kettle
Step by step
- Measure your tea. Use about 1 heaped teaspoon (2–3g) per cup. For a fuller flavour, add a little more rather than steeping for longer.
- Heat the water. Always start with fresh water. Fruit and herbal infusions love freshly boiled water. Green tea prefers water that has cooled for a few minutes, to around 80°C.
- Steep. Pour the water over the leaves and leave them to brew (see the guide below).
- Strain and enjoy. Remove the leaves so your tea doesn’t become bitter. Add honey or a slice of lemon if you like.
Brewing guide
| Type of tea | Water | Time |
|---|---|---|
| Fruit & herbal infusions | Freshly boiled (100°C) | 5–8 minutes |
| Green tea blends | Around 80°C | 2–3 minutes |
| Black tea | Freshly boiled (100°C) | 3–5 minutes |
| White tea | Around 75–80°C | 3–5 minutes |
| Oolong tea | Around 90°C | 3–5 minutes |
Top tips
- Re-steep your leaves. Green and oolong leaves can often be brewed two or three times.
- Try it iced. Brew fruit infusions at double strength, then pour over ice for a refreshing summer drink.
- Store it well. Keep your tea in an airtight container, away from light, heat and strong smells.
